The Bagnetto rosso, in Piedmontese "bagnet ross", is made with the best vegetables grown in the lands of Alba, Capital of the Langhe. It is traditionally prepared at the end of summer with the last available vegetables so that it can be traditionally eaten in winter. The flavor and aroma of this sauce on boiled meats is one of the most unforgettable flavors of Piedmontese cuisine. It also goes well with cheese and is ideal as a base ingredient for a bruschetta.
