Improperly defined as a Piedmontese grape mustard, thea Cögnà all'Albese is an ancient recipe typical of Alba and the Langhe, prepared in autumn by the housewives in the old days using the last bunches of grapes, the apples left to be picked from the trees, as well as pears and quinces. Everything was cooked with walnuts, hazelnuts and other typical nuts of the area. Ideal to accompany a cheese board.
