Hard cheese made from cow and sheep's milk, Occelli al Barolo matures very long
in the cellars of Valcasotto. It is then aged for a further two months in Langa marc
enriched with Barolo wine. It was considered the best "drunk" cheese in a test
conducted by the experts of Slow Food 1999.
